What is Assyrtiko?
Assyrtiko is most closely associated with Santorini's volcanic soils and basket-trained vines, though it now grows across Greece. The grape retains acidity even in hot, dry conditions.
Lemon, lime, green apple, crushed stone, smoke, and saline notes are common. Dry versions can feel taut and concentrated; sweet Vinsanto is a separate, sun-dried style.
