What is Ice Wine?
True ice wine is made by harvesting and pressing grapes that froze naturally on the vine. Water remains frozen during pressing, leaving a small amount of intensely concentrated, sugar-rich juice. Canada is a leading producer under the name Icewine, while Germany and Austria use Eiswein.
Peach, apricot, pineapple, citrus marmalade, and honey are common. Although very sweet, good examples retain enough acidity to feel vibrant. Riesling and Vidal are frequent grapes, but regional rules determine what qualifies for the name.
