The short version

What is Madeira?

Madeira comes from the Portuguese island of the same name. Controlled heating and oxygen exposure—once accidental effects of sea voyages—help create a stable wine with distinctive caramelized and savory complexity.

Orange peel, dried apricot, roasted nuts, caramel, smoke, and sharp acidity are common. Sercial is usually driest, followed broadly by Verdelho, Bual, and the sweetest Malmsey styles.
