What is Sémillon?
Sémillon is important in Bordeaux dry whites and Sauternes, and it has a distinctive history in Australia's Hunter Valley. It is often blended with Sauvignon Blanc but can be compelling alone.
Lemon, green apple, beeswax, hay, fig, and toast can appear. Young Hunter Valley versions may be light and citrusy, then gain honeyed, nutty complexity with bottle age.
