The short version
What is Cabernet Sauvignon?
Cabernet Sauvignon is a natural cross between Cabernet Franc and Sauvignon Blanc. Its small, thick-skinned grapes make deeply colored wines that can age for years, but many modern bottles are shaped to be enjoyable much sooner.
Expect blackcurrant, blackberry, plum, cedar, and sometimes mint or graphite. Oak can add vanilla and toast. Its noticeable tannin is why Cabernet often feels more complete beside protein-rich food than on its own.
